The BEST Homemade Cola

You don’t need to give up soda. You just need to make it better.


This homemade citrus soda is one of my favorite ways to recreate that bubbly, refreshing soda experience using simple ingredients I actually feel good about.

Fresh lemon, lime and orange. Cinnamon. Coriander. A little nutmeg. Vanilla. And yes, real sugar.

No artificial colors. No artificial sweeteners. No mystery ingredients.


What You’ll Need:


● 1 quart filtered water

● Finely grated zest and juice of 1 lemon

● Finely grated zest and juice of 1 lime

● Finely grated zest and juice of 2 oranges

● 2 large cinnamon sticks

● 2 teaspoons coriander seeds

● ¼ teaspoon finely grated nutmeg

● 1 cup brown sugar

● ½ teaspoon vanilla extract or ½ vanilla bean


How to Make It:

Add the filtered water, citrus zest and juice, cinnamon sticks, coriander seeds, nutmeg and brown sugar to a saucepan.


Bring to a gentle simmer, stirring until the sugar dissolves.


Let it simmer for about 10–15 minutes to allow all those bright citrus and warm spice flavors to come together.


Remove from the heat and stir in the vanilla.


Let it cool completely, then strain out the citrus and spices.


Pour the syrup into a clean glass jar and store it in the refrigerator.


Make It Fizzy


When you’re ready for your soda, pour some of the homemade citrus syrup into a glass and top with chilled sparkling water.

Add ice, give it a good stir and enjoy.


That’s it.

You just made your own soda.


And this is exactly how I approach food.
